Vinification: Hand-picked into 15 kg boxes and whole bunch pressed. Fermented for 32 days at 16ºC in terracotta amphorae. Aged on fine lees in the same 750 litre amphorae for 9 months. Not filtered or stabilised.

Tasting notes: Greenish yellow color. Slightly cloudy. Notes of white stone fruit, gunpowder and some pastry. When tasting, it has volume, with a texture reminiscent of the amphora where it fermented and aged. Deep and saline.

Pairing: Pairs well with mussels and limpets, cooked fish dishes, Italian pastas or cured cheeses.
