Winemaking: Hand-picked, the grapes were pressed whole bunches, using only the tears for this sparkling wine. Fermented in clay amphorae and aged for 1 year before being bottled. The second fermentation was done in the bottle using the classic method for 7 weeks at a temperature of 12ºC. Disgorgement took place in May 2024.

Tasting notes: Greenish color with very fine and persistent bubbles. The citrus notes are mixed with some breadiness resulting from the aging in the bottle with the free yeasts. In the tasting, the bubbles are very elegant, balancing and enveloping the very refreshing natural acidity that the wine has. It has a long and persistent finish.

Pairing: Ideal with appetizers or grilled seafood and fish. Should be served between 7ºC and 10ºC.
