Winemaking: Hand-picked into 12kg boxes, which are quickly transported to the winery. Very gentle pressing, followed by static defecation for 24 hours. Slow fermentation with half of the must aged for 6 months on fine lees.

Tasting notes: Citrus color. Fresh and citrus aroma (lemon peel). Floral (quince) and mineral notes. In the mouth, some saltiness, long and persistent wine giving a balanced and persistent acidity.

Pairing: Goes well with grilled fish, seafood, salads and white meat.
