Vinification: Vinification in stainless steel tanks at controlled temperatures, followed by batonnage and aging on the lees. Second fermentation in bottle according to the Classic Method, followed by a minimum aging period of 12 months in bottle until disgorgement is carried out.

Tasting notes: Clear appearance, fine bubbles and persistent string. Fresh and delicate aroma. The flavor presents persistence and complexity.

Pairing: Serve with oysters, clams, cataplanas, grilled sole and cheeses.
