Vinification: Vinification in stainless steel vats at controlled temperature, followed by batonnage and ageing on the lees. Second fermentation in the bottle according to the Classic Method, followed by a minimum ageing of 12 months in the bottle until disgorgement is carried out.

Tasting notes: Clear appearance, intense pink color with persistent and fine bubbles. Complex aroma. Round, with good mousse and a slightly acidic finish.

Pairing: Pairs well with light charcuterie, dishes with a sweet and salty contrast, such as salads with fruit and cheese.
